Maamoul biscuits are the most popular in the Middle East in the run up for Eid el Fiter and Easter. Families, neighbours and friends gather at each other's homes to help out. There is always the one who is an expert in the quantities of the ingredients, another known for kneading skills, and the other for decorating. Over a period of time, each family hosts the helpers. These gatherings are full of fun, chaos and nostalgic smells.

Maamoul cookies are somewhat similar to shortbread butter cookies, made with either semolina or flour, but filled with a smooth date paste or with walnuts or pistachios.
